Next month, mixologist Ryan Chetiyawardana will open a bar that looks set to revolutionize the drinking experience.

Called White Lyan, the project is the brainchild of cocktail aficionados Ryan Chetiyawardana and Iain Griffiths; the pair will forgo the use of traditional and perishable cocktail ingredients such as ice, citrus and liqueurs to create drinks that are entirely molecular. In addition, they will distill their own spirits and customize beers to remove any brand names from their bar environment and “put their own finish on things,” they explain in an interview to Diffords Guide Magazine.

The menu will comprise three signature cocktails that play heavily with texture and flavor, including the Lyan Club Cocktail and the Bone Dry Martini. Read more about Ryan Chetiyawardana in our Food Flavors report. White Lyan is due to open in mid-September. Keep watching the site for the latest Food & Flavors trends. – Samantha Fox
