New to Montauk is The Harbor Raw Bar & Lounge, a coastal den of fine cocktails and shared plates. The 50-seat locale boasts an impressive raw bar featuring globally-inspired seafood selections alongside local delicacies like East Coast oysters, Long Island steamers and Montauk fluke crudo. Helmed by chef Pierre Rougey, a former instructor at the French Culinary Institute, the menu here is designed for communal consumption and includes dishes like East-meets-West Mussels with black sesame, scallions and honey-glazed fried calamari or Drunken Lobster with whiskey-tarragon sauce and lobster whipped potatoes. The bar is headed by mixologist Moses LaBoy, who crafts summer interpretations of the time-honored classics. The Harbor is the ultimate Montauk destination for all hours of the day. Boaters and beach loungers can enjoy a daily oyster happy hour, while late night is reserved for live music and a midnight menu that caters to the partygoers.
