Located in the URSO boutique hotel in Madrid, is new pop-up restaurant concept The Table, whereby a rotation of six different chefs and the food from their restaurants is featured every month, for six months. Each new restaurant is to overhaul the space including the aesthetics, the concept, and the menu. The first is Etxanobe from Bilbao, with Michelin-starred chef Fernando Canales at its helm, and the menu featuring marinated fillet of mackerel with roasted pepper, mango tartar with king prawns and seaweed emulsion, and foie gras and coffee jam spoon. Other cuisines featured in the coming months include the best of Galicia, Cantabria and Barcelona. –Emily Cater
