The collaboration will see a total of 3 beers created for Jacobsen, Carlsberg’s premium range of specialty beers.
Like its work for sister restaurant Noma, the experimental food laboratory will source and utilize natural ingredients found locally to the Nordic region, such as woodruff and even bee larvae.
“I could, for example, imagine a Baltic Porter produced with seaweed,” explained Morten Ibsen, Jacobsen’s master brewer, in a recent interview with the Wall Street Journal.
